sab se pehly is haleem ka taaruf karwa don ...is ki sab se khas baat yeh hai k isy aap khud
banain ge...main ne aaj tak
haleem aik baar hi banai hai ... last 10th of moharram ko jab main ne isy banana shuru
kia tha tab main bohat ghabra gai thi k YA ALLAH isy banana shuru kar liya hai ab sahi
tareeqy se ban jaye koi ghalati na ho aur main jitna darti rahi thi haleem utna hi maze ki
bani ...to is ki teyari main sab se bada element hua pareshani ka jis ne mujhe subha 9 baje se
le kar raat k 7 bajy tak kitchen main qaid rakha hatta k main lunch karna tak bhool gai...
yeh main aap ko is liye bata rahi hoon k is ko banaty waqat sara dheyan isi par rahy ...
lets start...

ingredients:
beaf ....3 kg ( agar qurbani ki gaye ka gosht ho to woh best rahy ga kion k main
ne bhi qurbani ki gaye ka hi gosht use kia tha aur beaf k agar pieces
bady hon to aur bhi best is se achi tarha gosht k reshy banain ge)

masoor ki daal ............................aik pao
mash ki daal chilky k bagahir.....aik pao
mong ki daal chilky k bagair.......aik pao
chany ki daal .............................aik pao
daliya .........................................aik pao
chawal (rice) ............................aik pao


sab dalain aik ghanta bhigo kar rakh dain ...aik ghanta pehly se bhagoi hui dalon main aik
tbl spn salt aur 2 tbl spn surkh mirch daal kar pressure cooker main daal kar ittna pani
daal kar pressure dain k sab dalain achi tarha gul jain.
dalia aur chawal aleda aleda ubal lain ...in ko bhi ubalty waqat aik tea spn salt aur aik tea spn
surkh mirch dal kar pakain ...dalia aur chawal aleda aleda pakaty waqat is baat ka kheyal
rakhain k yeh degchi k sath na lagain....

ab gosht ki teyari karty hain is k liye ingredients yeh hon ge...

gaye ka gosht .....3 kg
peyaz...................1 kg
lehsan k joye........20 tbl spn
adrak......................1 pao barik pisa hua
oil............................half kg
masalhy...
kali mirch....2 tbl spn
long.............1 tbl spn
safaid zeera....1 tbl spn
sookha dhania pisa hua........5 tbl spn
badi ilaychi...................10 adad
dar cheeni...................1 inch k 10 tukry
surkh mirch ................4 tbl spn
salt ..........................hasbe zaroorat
haldi .........................1 tbl spn
NATIONAL HALEEM MASALA ....aik packet


teyari.......
1 kg peyaz barik barik kaat lain ....
pressure cooker main half kg oil dalain aur us main peyaz brown karain jab peyaz light brown ho jaeen to us main gosht daal dain jab gosht ka rang badly to us main lehsan daal dain aur 5 min k bad is main hasbe zaroorat namak aur surkh mirch aur haldi daal kar achi tarha bhonain..10 min k bad sary masalhy kali mirch , zeera , long , badi ilaychi, dar cheni, aur pissa hua sookha dhaniya daal kar 15 min tak bhonain...is k bad is main itna pani dalain
k aadha ghanta tak pressure cooker main pakky ....adha ghanta pressure dene k bad check karain jab gosht achiiiii tarha gal jaye to gosht ko aik dafa phir bhonain k oil alag ho jaye ...
ab gosht choolhy se utar lain aur us main se gosht k piece alag kar lain aur in pieces k choty choty reshon jesy tukry karain...ab jis msalhy main gosht pakaya tha us main thoda sa pani dalain aur is main se daar cheeni k tukry aur badi ilayechi alag kar lain ...aap chahain to long ya kali mirch bhi nikal sakty hain...
ab aik bady se degchy main jo daalain ubli hui hain aur daliaya aur chawal ubaly huy hain
woh dalain ...jis masalhy main gosht ko pakaya tha woh dalain aur sath hi gosht k pieces
bhi dalain aur 2 kg pani daal kar haleem pakny k liye rakh dain ....
sath hi aik packet NATIONAL HALEEM MASALHA daal dain aur doi ki mdad se isy halaty rahain ta k haleem sath na lagy ....
jab haleem ki shakal haleem jesi ho jaye to us ka namak check karain agar aap ki passand
ka ho to sahi phir apny kisi bhai ki hidmaat hasil karain aur usy haleem ghoutny par lagain
achi tarha ghotian ta k gosht aur dalain bilkul aik jaan ho jaeen...aur gosht k reshy bilkul bhi nazar na aain ....yani sab kuch achi tarha mix ho jaye...

aik karahi main dhair sara oil nikalain...aur us main aik pao k qareeb peyaz barik barik
kaat kar is main brown karain...is tarha peyaz fry karain k peyaz jaly nehi...jab peyaz light brown ho jaye to chalni ki madad se usy nikalain aur saaf akhbaar (news paper)par phela dain aur thanda hone dain ...ta k yeh fry peyaz crispy ho jaye....

ab jis oil main ham ne peyaz fry ki hai woh taqreeban 5 serving spn teyyar haleem
main tarky k liye daal dain....now 99 % haleem is ready

garnish karny k liye ...aap lijye
adrak...................barik barik katy huy 1 inch k tukry
hara dhaniya
podina
hari mirch....kati hui
lemon

serving dish main haleem nikalain....uspar thoda sa adrak dalain....phir dhaniya, podina
k patty aur hari mirch dalain....phir fry cricpy peyaz dal kar ooper lemon se saja dain...

lijiey mazedar haleem teyaar hai......agar passand na aaye to pesy wapis

note for girls ( serv karty waqt aik tez dhaar churi ya chaqoo pakdy rakhain ta k
koi aap ki aik poory din ki mehnat ko aik jumly main barbad karny se pehly
aik dafa churi ki tez dhaar dekh le)
